21 marzo 2022 – Essere sicuri in cucina, saper cucinare in modo sano, non fa solo bene alle papille gustative: e’ positivo anche per la salute mentale. Lo evidenzia una ricerca della Edith Cowan University, pubblicata su Frontiers in Nutrition. In totale, 657 partecipanti hanno seguito un corso di cucina salutare di sette settimane. I ricercatori hanno misurato l’effetto del programma sulla fiducia in cucina e sulla salute mentale auto-percepita dei partecipanti, nonché sulla loro soddisfazione generale riguardo ai comportamenti culinari e legati alla dieta. Gli studiosi hanno scoperto che coloro che hanno partecipato al programma hanno visto miglioramenti significativi in termini di salute generale, salute mentale e vitalità soggettiva subito dopo il programma, una conduzione che è rimasta sei mesi dopo il completamento del corso. Sono stati anche segnalati miglioramenti nella sicurezza in cucina, nella capacità di cambiare facilmente le abitudini alimentari. Questi benefici erano legati al cibo più sano e non solo: la salute mentale dei partecipanti è migliorata anche nonostante la dieta riportata non cambiasse. Lo studio ha anche rivelato che cucinare rimane un compito altamente di genere. All’inizio del programma, il 77% dei partecipanti alla ricerca donne hanno affermato di essere sicure nel cucinare, rispetto a solo il 23% degli uomini. Ma alla fine del programma, la sicurezza in cucina e le abilità culinarie erano uguali in entrambe le controparti.
